Ingredients (serves 8)
200g mixed salad leaves (such as endive, witlof, butter and treviso)
2 avocados, halved, stones removed, peeled, thinly sliced
2 Lebanese cucumbers, thinly sliced
1 green capsicum, deseeded, thinly sliced
Balsamic vinaigrette
60ml (1/4 cup) extra virgin olive oil
1 tbs balsamic vinegar
1 garlic clove, crushed
1/2 tsp caster sugar
Method
Combine the mixed salad leaves, avocado, cucumber and capsicum in a large serving bowl.
To make the balsamic vinaigrette, use a fork to whisk together the oil, vinegar, garlic and sugar in a jug until well combined. Taste and season with salt and pepper.
Pour the balsamic vinaigrette over the salad. Serve.

Well AC you asked where i got the idea of cucumbers and as my favourite vegetable the cucumber i chose it and it is the main ingredients in my favourite dish Cacik i chose the cucumber.

What are cucumbers?
The cucumber is a creeping vine that roots in the ground and grows up trellises or other supporting frames, wrapping around with thin, spiraling tendrils. The plant has large leaves that form a covering over the fruit.
The cucumber is roughly cylindrical, elongated, with tapered ends, and may be as large as 60 cm long and 10 cm in diameter. Cucumbers grown to be eaten fresh and those intended for pickling similar. Cucumbers are mainly eaten in the unripe green form. The ripe yellow form normally becomes too bitter and sour. Cucumbers are usually over 90% water.
